Amaranth is an ancient grain, cultivated by the Aztecs over 8,000 years ago. It has almost twice the amount of iron found in quinoa and works well in this salad, with creamy feta cheese, cherry tomatoes and an olive oil dressing.

Plating instructions

  1. Open the lettuce container, tip contents into a small mixing bowl and dress with the olive oil
  2. Place the lettuce in a serving bowl
  3. Open the amaranth & feta salad and spoon in the centre of the rocket
  4. Add a twist of cracked pepper over the top, serve and enjoy
