Asparagus, wild mushroom and tarragon dressing, caramelised shallot jam, sourdough croutons

The lightly charred and tender asparagus goes beautifully with the wild mushroom and the pungent, liquorice flavoured tarragon dressing. The sweetness of the shallot jam and the crunchiness of the croutons add additional textures.

Additional information

Asparagus: olive oil, salt, pepper


Wild mushrooms: oyster, chestnut and chanterelle mushrooms, olive oil, sherry vinegar (sulphites), tarragon, tomato, salt, pepper, shallot, garlic


Caramelised shallot jam: shallots, red wine vinegar (sulphites), sugar, salt


Sourdough croutons: bread flour (gluten), olive oil, salt


Garnish: micro parsley

Cooking & plating instructions


  1. Open the asparagus and leave out to come to room temperature
  2. Snip the piping bag of the shallot jam and pipe one line on a chilled serving plate. With a spatula, spread this out thinly
  3. Arrange the asparagus on top of the jam
  4. In a small saucepan, warm the mushroom dressing and spoon over the asparagus
  5. Place croutons on the mushrooms
  6. Sprinkle on micro parsley, serve and enjoy
