 This healthy tomato and red pepper soup recipe is smooth, creamy and packed with deep flavour from slow-roasting the tomatoes, onion, and garlic. Equally delicious served chilled on a hot summer’s day.

Soup: Tomatoes, peppers, celery, onion, garlic, basil, salt, olive oil, rosemary, sugar, white wine vinegar (sulphites), mascarpone (milk), smoked paprika, lemon juice

Cooking/plating instructions


  1. Release the lid and place in a microwave for 2-3 minutes until piping hot, then leave to stand for 1 minute
  2. Pour the soup into a warm serving bowl
  3. Open the lid of the mascarpone, place one tsp on top of the soup, serve and enjoy
