Turbot – The finest of catches, delicious turbot with sautéed langoustines, leeks and morels, a delicate white wine sauce and a side of mash.

You will need

A saucepan for the sauce, a heavy frying pan and a baking tray


Cook time

12-15 mins


Cooking instructions


  1. Preheat oven to 180c/160c fan/gas mark 4

  2. Season the fish with salt and pepper

  3. Heat 1 tbsp of sunflower oil in a large non-stick frying pan

  4. Place the turbot flesh side down and the langoustine in the warm oil and cook for 2-3 mins, add a knob of butter and spoon the foaming butter over the fish

  5. Remove the turbot and langoustine from the frying pan carefully using a fish slice and place onto the baking tray

  6. Place in the oven for 8-10 mins

  7. Add the sauce to a small saucepan, bring to a simmer and turn off

  8. Reheat the leeks and morel mushrooms in a medium frying pan with a knob of butter. Cook until warm through and keep warm

  9. Pierce the bag of mashed potato, microwave for 2-3 mins until piping hot, and leave to stand for 1 min. Then spoon into a serving dish
  10. To serve, arrange leeks & morels in the centre of the plate, then top with the turbot. Arrange the langoustines around the fish, together with the sauce and garnish with fresh dill

  11. Lightly drizzle the truffle oil over the mashed potato, serve and enjoy
